We aren't much for clubbing, but here are places we frequent.  Keep in mind after Labor Day weekend, many of the places slow down.

Very very beachy place that is quite the "after beach" crowd.
Most people hang around outside drinking the stiffest island drinks you have ever tried.  Be sure to buy the house special with a "floater".  We don't reccomend after dark or the food.  
The owner is quite a character.

A speakeasy named after a Native American from the area.
They have great bands play there, including our wedding band!  Drinks leave a lot to be desired and crowd can be young at times, but it is almost always a fun crowd.  Can get a little too much in Aug but should be back to normal Sep.

Stephen's Talkhouse, 161 Main St, Amagansett 631.267.3117

Funky Tex-Mex food with terrific Margaritas served in mason jars and a surfer/cowboy decor.  Crowd is generally fun and bartenders are always great.  Food is only OK. The perfect place to stop for a late afternoon drink and hang out!  This is not a night hangout.

A very sceny place but the bar is nice and the drinks are good.
Summer is always packed with people dressed for a night out.

Pacific East, 415 Main St, Amagansett

The food here is actually good asian fare.  The place has turned into quite the velvet rope after dinner.  Usually a good late night crowd in the bar.
